Sunday Meatballs


2 carrots diced small

2 stalks celery diced small

1 Tablespoon olive oil

1 pound of ground chicken

1 cup chopped spinach

¼ cup oats

1 egg

1 Tablespoon chopped parsley. 

Directions line baking heat with parchment and heat oven to 350 degrees.  In a non-stick pan heat the oil and saute the carrots and celery.  When soft add the spinach and saute until wilted.  Move to a bowl and cool.  When cooled add the chicken, eggs, oats and parsley and mix well.  Using a small ice cream scoop, scoop out meatballs and place on backing sheet.  Each ball will be about 1-1/2 ounce and you will get at least 24 meatballs.  Bake 20-25 minutes until done.  When cooled moved to an air tight container and store in the refrigerator for a few days or freeze and thaw as needed.  Each meatball is about 35 kcals.
